Our chilaquiles are what people talk about when they talk about El Itacate. Crispy tortilla chips slow simmered in a bold house made red or green salsa, topped with cool crema, crumbled queso fresco, and a fresh egg cooked to your liking. Nothing on that plate was a shortcut. Nothing was reheated. It was all made that morning, in our kitchen, the same way it has always been made.

Pupusas

We press each one by hand using fresh masa, stuffing it with your choice of melted cheese, seasoned black beans, or rich savory chicharron. They go straight onto a hot griddle and come out golden on the outside and perfectly warm and soft on the inside. Served alongside fresh curtido and our house salsa — this is the kind of food that takes skill, patience, and care to make right.
